Weekly Meal Plan: Week of March 1

Another Monday, another meal plan. I don’t have a picture this week (I’m sure you guys are tired of looking at the same meal every time!), but I’ll try to have a good one for next week from one of this week’s meals.

Before I get to the menu, here’s how we did last week.

Last week was a bit odd. We fought excessive errands and a power outage, which put us eating out more often than I’d prefer. (We didn’t want to open the fridge during the power outage since I’d just gone shopping the day before. The last thing we wanted was to throw out $100 worth of food.) Despite eating out for 3 (or 4; I don’t remember) of the meals, I think we did okay sticking with our menu the rest of the time. The benefit is that I bought lots of chicken last week, so I won’t need quite as much this week, which will help this week’s budget, especially since I took that into account when choosing the meals and selected mostly chicken dishes.

Here’s what we’ll be eating this week:

Monday (today), lunch: We were out doing errands today – getting our passports! – so we just got sandwiches and chips from the grocery store.

               Dinner: Since it’s currently after 4:00 p.m. and I’m typing a blog post instead of shopping or cooking, *laugh*, we’re going to have take and bake pizza.

Tuesday, lunch: Macaroni and Cheese

               Dinner: Enchilada casserole, Mexican rice

Wednesday, lunch: Chili and Quesadillas

               Dinner: Jamaican Jerk Chicken, Caribbean rice and beans

Thursday, lunch: Corn Chowder, Bread and butter

               Dinner: Parmesan Chicken, angel hair pasta, steamed vegetables

Friday, lunch: French Bread Pizza

               Dinner: Mongolian Beef and Broccoli over rice

Saturday, lunch: Grilled Cheese, fruit

               Dinner: Honey Mustard Chicken, rice, steamed vegetables

Sunday, lunch: Crock-pot spaghetti (our tradition)

               Dinner: Pineapple Cranberry Chicken, rice, steamed vegetables

So that’s what on tap for us this week. What are you eating?

      I’ve never made the Mongolian Beef and Broccoli, but we love the PF Chang’s frozen version. I’m hoping this copycat one is as good. Crock-pot spaghetti isn’t so hard. I’ll do up a post on it next week. I’d do it this week, but I’ll need to take pictures on Sunday 😉

          I hope you’re not disappointed when I do my spaghetti post next week, lol. Only the sauce is crockpot; the noodles are still cooked on the stovetop.
